OUR ENVIRONMENTAL COMMITMENT BEGINS WITH A GOVERNMENT-APPROVED FORESTRY STUDY THAT IDENTIFIES HECTARES SUITABLE FOR SUSTAINABLE HARVESTING—LIMITING EXTRACTION TO ABOUT 30% PER HECTARE. THESE GUIDELINES PROTECT THE DASYLIRION’S HABITAT, PROMOTE REGENERATION, AND OVERSEE BOTH HARVESTING AND TRANSPORTATION FROM FIELD TO DISTILLERY. THEIR DURATION ADAPTS TO OUR PACE OF EXTRACTION, ENSURING PRODUCTION REMAINS IN HARMONY WITH THE ENVIRONMENT.
PIONEERING THE FUTURE OF SOTOL
For over seven years, Sotol Hacienda has been nurturing a dedicated sotol plantation — not for mass production, but to protect the category and prepare for the future. We were the first in the industry to envision and execute a project of this scale, driven by deep respect for the plant and the land it calls home.
SCIENCE MEETS TRADITION
Led by our Master Distiller, Dr. Jose Daumas, this vision began in collaboration with local institutions to improve seed germination and develop in-vitro propagation techniques. Over the years, we’ve shared findings, exchanged best practices, and refined our approach, always with sustainability at the core.
A LIVING LEGACY
None of these plants are currently used for production. Instead, this is a living, carefully managed project designed to study, protect, and help regenerate wild sotol populations, ensuring the plant’s availability for generations to come.
OUR DESERT HEARTS
Every day, our dedicated field team tends to these young plants, our “desert hearts”, with the same care and respect we give to those harvested in the wild. It’s a commitment to the land, to our craft, and to the future of sotol.

CERTIFICATIONS

ORGANIC CERTIFICATE:

This certificate is awarded by IMOCert México and guarantees that the product has been produced without the use of non-organic substances, preserving soil fertility and   preventing erosion.

USDA Certificate:

The USDA Organic certificate is awarded by the United States Department of Agriculture and guarantees that the product is 100% organic. To obtain this certificate, producers must comply with the USDA's organic production standards.

SAGARPA MÉXICO ORGANIC CERTIFICATE:

This certificate is awarded by the Mexican Ministry of Agriculture and Rural Development and guarantees that the product has been produced in accordance with the food safety standards established in the Organic Products Law.

EUROPEAN ORGANIC AGRICULTURE CERTIFICATE:

This certificate guarantees that the product has been produced in accordance with the European Union's organic agriculture standards, including environmental protection, soil fertility conservation, and respect for natural cycles.

KOSHER CERTIFICATE:

The Kosher certificate guarantees that the product has been produced in accordance with Jewish dietary laws, including the prohibition of consuming certain foods, such as pork and shellfish.

PAREVE LE PESAJ CERTIFICATE:

This certificate guarantees that the product does not contain meat or dairy products and is suitable for consumption during the Jewish holiday of Passover.

GLUTEN-FREE CERTIFICATE:

The Gluten-Free certificate guarantees that the product does not contain gluten, a protein found in certain grains such as wheat, barley, and rye.
